POULTNEY, VT — William “Bill” Knox, age 59, passed away peacefully in Rutland, VT on July 18, 2020. He was born in Proctor VT on March 17, 1961. Bill was a 1979 Oxbow High School graduate and an Army Veteran SP4 Medical Technician/Armor ACO MSB. His passions included rescuing and training sled dogs, fishing and kayaking, storytelling, and cooking. Following his time in the Army, Bill continued his passion for cooking at Lake Morey Inn Resort as Sous Chef working with his dad, William Knox Sr. Bill later became Executive chef and continued cooking throughout his career. Bill is survived by his daughter Megan & Son-in-law Christopher Newton of Everett, WA, mother Carolyn Aitken of Poultney, VT. Siblings Debbie Knox of Charlottesville, VA, Scott & Mickey Knox of Londonderry, NH, Jacqueline Samson of Glastonbury, CT, and many nieces, nephews and cousins. His big heart, inappropriate jokes, smile, and stories will be forever missed. A celebration of life will be held at a later date.
