Fourth Boil of the Season

Dennis Bigelow reflects on the dairy business while inside his barn at Royal Terrace Farm in Royalton, Vt., on Wednesday, Feb. 21, 2018. Bigelow now only milks his 13 Guernsey cows on a seasonal basis, and sells the milk for goat feed, rather than to a dairy. "It's kind of bizarre, this whole agriculture thing," said Bigelow, whose grandfather purchased the farm in 1920 and named it for a terraced hillside that was covered when Interstate 89 was built through some of its pastures in the 1960s. Bigelow is proud of the content of his cows' milk and joked, "You could read the date on a quarter in a 5-gallon pail of Holstein milk. And then Jersey cows are for farmers that are too proud to milk goats. Guernseys, they're always considered the rich man's cow. Their claim to fame was highest in solids, non-fat.
